For my daughter’s birthday party we had: Steak Fajitas; Shrimp Tacos; Black Bean, Corn, and Avocado Salsa; and refried beans. This served four adults and four tweens with little to no leftovers! Here are the recipes.
- 1.5 LBS Flank Steak
- 1/2 c. soy sauce
- 1/4 lime juice
- 3 tbs chili powder (divided)
- 3 tbs cumin (divided)
- 3 tbs ancho chili powder (divided)
- 1/4 c olive oil (plus more for cooking)
- 2 small white onions or one large
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- Tortillas, sour cream, avocado, and shredded
Place the flank steak, soy sauce, lime juice, 2 tbs chili powder, 2tbs cumin, 2 tbs ancho chili powder, and 1/4 c olive oil in a zip top bag in fridge to marinate overnight.
Slice the marinated steak, onions and bell peppers into strips. Note, slice the flank steak very thinly and against the grain for maximum tenderness.
In a large pan, cook the onions and bell peppers in some oil until tender. It will take about 15 to 20 minutes to get this to the right tenderness.
Once soft, remove the vegetables from the pan. Add some more oil and cook the flank steak. When the steak looks almost done, add the vegetables back in along with the remaining chili powders, a 1/4 teaspoon of salt, and cumin.
Serve with sour cream, avocado, warmed corn tortillas, and cheese.
This one is super easy and doesn’t really need a recipe. Buy frozen Boom Boom Shrimp – Whole Foods sells it 2 LBS for $19.99. Cook 1.5LBS of the shrimp per instructions on the package.
Make coleslaw per instructions, but replace the vinegar with lime juice. You can jazz this up with some cumin and chili powder too if you want.
Buy some Yum Yum sauce from the Asian section of the grocery store.
Put the cooked Boom Boom Shrimp, Coleslaw, and Yum Yum sauce in a warmed tortilla and you have easy shrimp tacos!!!
Black bean, corn, and avocado Salsa
- 2 cans Bush’s Black Beans (drained)
- 1 can super sweet corn (drained)
- 1 avocado cubed
- 1/2 c chopped cilantro (to taste)
- 1/4 c lime juice
- 1/4 c extra virgin olive oil
- 1/2 tsp salt
- 1 tbs cumin
- 1 tbs chili powder
- 1 tsp cayenne powder (to taste)
Combine all ingredients and serve with tortilla chips. Yum!
They are only good if you fry them lightly before serving.
