Half the country is expecting significant winter weather, with the possibility of prolonged power outages and impassable roads.
For those of us who are gluten free, that can add an extra layer of stress to an already stressful situation. I am by no means an expert — this is simply what I’ve done to make sure we’ll be okay when it comes to food. There are a million ways to prepare for something like this; I’m just sharing my two cents.
First, I’m focusing on casseroles and batch-cooking large amounts of protein. That should cover us for a few days — though possibly not with a teenage boy in the house.
A pot roast is an easy option and doesn’t require any packet seasonings: just salt, pepper, bay leaves, red wine, beef stock, and maybe a little thyme. Pot roast also tastes even better the next day. I’m pre-baking some potatoes as well.
I’ll also cook off some chicken thighs in the oven so they’re ready for whatever we might need them for.
We have country-style ribs planned for a long, slow cook on the smoker. That can be done with or without power, and if we don’t cook them this weekend, they can go into the freezer for another day.
For breakfast, I’m making a breakfast casserole with hash browns, sausage, eggs, and cheese. I’ve also frozen coffee cubes — just in case things really go sideways.
And yes, I’m pre-cooking bacon, because bacon is always a good idea.
Altogether, that’s probably two or three days’ worth of food. Beyond that, I have backup options: bagged salad, leftover frozen soups, ingredients for chili (which can be cooked on the grill or smoker if needed), and enough eggs to last about two weeks if things get serious. I also have plenty of canned beans and dry goods on hand.
We have two bags of charcoal and a full propane tank for the griddle. Our stove and stovetop are electric, so having backup cooking methods felt important.
I don’t know if this is exactly the right setup or if it’s enough. If we go past about a week, I’ll start to worry. But for now, I think we’ll be okay.
