If you have celiac, you already know this moment.
You’re at a gluten free-ish restaurant.
Not dedicated.
Not fully safe.
But they’ve got gluten free buns… maybe a separate fryer… so you take the chance.
You order carefully.
Gluten free bun.
Ask the questions.
Clarify the fryer.
Make it very clear: This has to be gluten free.
Food comes out. You double check.
And then…You see it.
That split second of panic.
The hesitation.
The stammer.
The sudden loss of confidence.
They look at the plate. “Let me check on that.” And now you know.
Next thing you see?
Manager at the table.
Apologizing.
“We’ll remake it.”
Here’s the problem: Sometimes “remake it” doesn’t mean remake it.
Sometimes it means: take it back, scrape something off, and send it right back out
So if something feels off…You have about 3 seconds to act.
The Ketchup Trick
Put something on your food. Ketchup. Sauce. Anything.
Right before they take it away.
Because when the new plate comes out clean… you’ll know one thing for sure: they actually remade it.
Not fixed it.
Not scraped it.
Remade it.
Is it a little petty? Yes.
Is getting glutened because someone cut a corner worse? Also yes.
