In today’s episode of “Someone Just Discovered Food”, the Agriculture Secretary suggested a meal that (drumroll) is… actually gluten-free:
- Chicken breast
- A piece of broccoli
- A corn tortilla
Ma’am. That’s not a bold, innovative nutrition plan.
That’s Day 3 of being diagnosed with celiac—when you don’t trust marinades, seasonings, sauces, restaurant kitchens, or happiness yet.
This isn’t a “budget meal.” This is the gluten-free starter pack: protein + sad vegetable + plain carb + emotional damage.
What He Thinks It Is vs. What It Actually Is
What she thinks: “A practical, simple, healthy meal idea!”
What it actually is: the universal “I am not risking cross-contact today” plate.
Because once you’ve been gluten-free for real (celiac-style, not “I’m doing it for vibes”), you learn fast:
- “Seasoned” can mean “seasoned with mystery.”
- “Gluten-friendly” means nothing.
- “It’s basically gluten-free” is how you end up spending the next 48 hours bargaining with your intestines.
The Corn Tortilla Problem (AKA: The Part Everyone Pretends Isn’t Complicated)
Yes, corn tortillas can be gluten-free.
And yes, corn tortillas can also be made on shared equipment, stored near flour tortillas, handled with the same gloves, or warmed on the same surface as everything else.
Which means: if you’re celiac, the tortilla is either safe… or it’s a tiny round anxiety disk.
Real Talk: This Meal Is Fine. The Framing Is the Problem.
I’m not here to bully chicken and broccoli. They’re innocent.
I’m here because acting like “chicken + broccoli + tortilla” is a helpful, universal solution is… a choice.
Because for a lot of people, the issue isn’t “we forgot simple meals exist.”
The issue is:
- cost, time, and access
- food deserts and availability
- disability, chronic illness, fatigue
- and for gluten-free folks: the constant risk-management that comes with eating
But sure. Let’s all just eat our chicken breast in silence and pretend this is groundbreaking.
