I hope you have had a good gluten free year. Here are what I have accomplished in my gluten free life this year.

I’ve mastered gluten free fried chicken. I’ve made fried chicken a million ways – wet batter, dry batter, double dipped, etc. and found the way I like it. I’ve learned that the trick is using more seasoning in the gluten free batter. It needs more seasoning than you think. Double the amount of seasoning you think is necessary gets it just about right.

I started an Etsy shop. I have been wanting to do this for two years. I finally bit the bullet and did it.

I only had one episode of serious glutening. I allow myself two per year. I think any more than two is too many. I know the food source that caused it, but both were supposed to be gluten free. One might have been subject to some cross contamination and that may be what got me.

I got a new job and told them about my celiac disease during the interview process. Luckily, they still gave me the job. At the holiday party, they ensured I had some treats and foods to eat. I’d call that a win!
