What am I eating this week?

I know lots of people struggle with what to eat. Here are 4 gluten free meals. This week I went a little over my normal $100 budget with a steak for a big deal my husband just closed, but you can do a steak just use a less expensive cut of meat.

Sunday – Ribeyes with roasted asparagus and baked potatoes. No recipes needed here.

MondayShrimp Creole with White rice. This is the recipe I used, but in my version of the recipe it is slightly different. Here is where I changed it. I used 1.5 lbs of shrimp, 1 onion, and 1 bell pepper. The rest is the same and served it over rice. It was darn good!

Tuesday Baked potato turkey sloppy Joes. I got this on the table in about 20 minutes. You can make it even faster by buying pre-cut veggies.

Wednesday – Fajita Nachos. Cut into strips a red bell pepper, a green bell pepper, a yellow bell pepper, and a sweet onion. Put the veggies in a very hot pan and add about a 1/4 cup of water. Put a lid on the pan to steam the veggies a bit. Once the water is boiled off add a bit of oil to get some brown on the veggies. While the veggies cook, cut boneless, skinless chicken into strips. Once the veggies are cooked remove and set aside. Cook the chicken in a very hot pan with a small amount of oil. When the chicken is cooked add the veggies back into the pan and add whatever fajita seasonings you like. Place some tortilla chips on a plate, put the fajita mixture over the chips, and add warmed cheese dip. Then top as you like with avocado, salsa, lettuce, tomatoes, etc.
