Couple of things for you today…..

Campbell’s Tomato Soup – 8oz tomato purée, 1 tbs corn starch, 1-2 tbs sugar based on taste, pinch of salt. This is what I use to replace Campbell’s tomato soup in recipes. I also have been known to add water or milk to this to thin it out for tomato soup on a cold day!

Easiest dump and go gluten free crock pot recipe that is delicious and nutritious- Andioulle Sausage, White Bean, and Collards Soup from Real Simple.

Here is the recipe. Place in a crock pot 1lb Andioulle sausage (I like Savannah Sausage Company or Aidelles), 1 medium onion chopped, 3 stalks celery chopped, 4-5 sprigs of fresh thyme (if in a pinch 1 1/2 tsp dried thyme will do), 1 lb dried white beans (pick your gluten free fave), 8c low sodium chicken stock. Cook on low for 6-8 hours. About 30 minutes before serving add chopped collards and a dash of red wine vinegar. Sprinkle Parmesan on top if you like and serve with crusty bread, I like toasted Against the Grain Baguettes.

Most of the time I don’t post recipes. I feel like there are a ton of gluten free recipe resources that do it better than I ever could. My favorite gluten free recipe resources are BettyCrocker – there is a HUGE gluten free section. My family loves the Taco Pie and Chicken Pot Pie recipes. Nom Nom Paleo has a lot of good Asian recipes for knock offs – love the Singapore noodles and Kaluah Pork. Iowa Girl Eats has a vast array of gluten free recipes.

Then I use a variety of other resources for whatever else, I’m cooking. Lately, I’ve made knock off PF Chang’s Mongolian Beef, Honey Soy Chicken, Spicy Roasted Tomato soup, Faux Burnt Ends, Proscuitto wrapped figs, Tuscan Chicken with Rice, and Publix 5 Can Chili.
